Easy-to-Bake Banana Bread Recipe
The batter for this easy-to-bake banana bread is enriched with the addition of apple sauce.
Yield: Makes 1 loaf

ALL INGREDIENTS MUST BE ORGANIC FOR HEALTH BENEFITS
Ingredients:
- 1/2 cup coconut oil, at room temperature, plus more for pan
- 1 cup granulated sugar/ honey
- 2 large eggs
- 1 1/2 cups unbleached flour/nut meal, combined or individual( kamut, quinoa,amaranth)
- 1 teaspoon salt
- 1 cup mashed very ripe bananas
- 1/2 cup apple sauce
- 1 teaspoon vanilla
- 1/2 cup chopped raisins walnuts or pecans
Heat oven to 350 degrees. Grease and flour bottom of loaf pan, 9x5x3 inches. Mix all ingredients; beat on medium speed ½ minute scraping bottom and sides of bowl constantly. Pour into pan. Bake until wooden pick insert in center comes out clean, 9 inch loaf 55 to 65 minutes. Cool slightly. Loosen sides of loaf from pan; remove. Cool completely before slicing. To store, wrap in paper and refrigerate no longer than 1 week.
CARMELIZED SWEET POTATOES
ALL INGREDIENTS ARE TO BE ORGANIC FOR HEALTH BENEFITS

Ingredients
- 3 tablespoons coconut oil
- 2 pounds sweet potatoes, peeled and cut into 1/4-inch-thick rounds
- 2 1/2 tablespoons garlic, minced
- 1 1/2 cups homemade chicken OR turkey stock
- 2 tablespoons honey, two tablespoons brown sugar.
- 1 teaspoon coarse salt
- 2 teaspoon cinnamon
- ½ teaspoon nutmeg
Directions
Step 1 Heat oil in a large skillet over low heat. Add sweet potatoes; cook, turning occasionally, 3 minutes. Add garlic; cook, stirring constantly, 1 minute. Add stock; simmer, stirring occasionally, until almost all liquid has evaporated, about 20 minutes.
Step 2 Add brown sugar, honey, cinnamon and salt; cook, carefully turning potatoes togolden both sides, about 20 minutes.
Step 3 Transfer caramelized sweet potatoes to a serving platter. Let cool slightly.



EGG BURRITO
ALL INGREDIENTS MUST BE ORGANIC WITH NOTHING ADDED FOR HEALTH BENEFITS.

Ingredients:
- 1 1/2 Tbsp. coconut oil
- 1/2 cup finely chopped assorted fresh vegetables(peppers, tomatoes and/or green onions)
- 2 slices turkey bacon, chopped (optional)
- 2 eggs
- 1 Tbsp. water
- 1 Tbsp. cashew cheese
- 2 (6-in. ea.) tortillas
Directions
- Melt 1 tablespoon coconut oil and small amount of water, cover, over low heat and cook vegetables and bacon, stirring occasionally, until vegetables & bacon are tender about 4 minutes.
- Meanwhile, combine eggs and water in small bowl with wire whisk. Add eggs into pot and stir until eggs are set. Remove egg and vegetable mixture and evenly divide between tortillas. Top with cheese; then roll.
- To seal and toast burritos, coat tortillas with coconut oil and bake for 3 minutes. Arrange burritos, seam-side-down and bake, turning once, until golden, about 4 minutes.
Serve warm or freeze with tight lid and serve later.
APRICOT or PEACH BUTTER
Ingredients:
- 4 LBS FRESH PEACHES OR APRICOTS, APPLES OR BANANA
- 2 ½ CUPS HONEY
- 1 TSP CINNAMON

Unstuffed Cabbage
Ingredients:
- 1 large cabbage, sliced into 1/2 inch strips
- For the Meatballs:
- 2 pounds (1 kilogram) ground beef
- 2 large eggs
- 4 cups tomato sauce
- 3 tablespoons Homemade bread crumbs or whole grain brown rice.
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- Finely chopped medium size onion
- For the Sweet and Sour Tomato Sauce:
- 2 cups (16 ounces/450 grams) tomato sauce
- 2 tablespoons lemon juice, or to taste
- 3 tablespoons honey, or to taste
Preparation
- Put 2 cups of water into a large stockpot, and bring to a boil. Add the cabbage, reduce the heat to low, cover, and steam for 20 minutes.
- While the cabbage is steaming, make the meatballs: In a large bowl, mix together the beef, 2 cups tomato sauce breadcrumbs or rice, paprika, garlic, salt and pepper. Form the mixture into meatballs and place them on top of the cabbage. Cover and continue to cook over low heat.
- In another bowl, mix the 2 cups of tomato sauce, lemon juice, and honey. Pour the sauce over the meatballs and cabbage.
- Cook, covered, for 1 hour, and then stir and taste. At this point, you can adjust seasonings by adding more water, tomato sauce, lemon juice, or brown sugar according to taste. Cook for another 15-30 minutes, or until the meat is cooked through and the cabbage is tender
CHOCOLATE CAKE EXPRESS

Ingredients:

1–PREHEAT OVEN 375 % F. GREASE & FLOUR AN 8 X 8 X 2 BAKING PAN.
IN A MIXING BOWL, COMBINE THE FLOUR, SUGAR, COCOA, BAKING SODA, AND SALT.
MAKE A WELL IN THE CENTER OF THE MIXTURE AND ADD THE VANILLA, VINEGAR, AND OIL,HONEY AND OIL
THEN GRADUALLY STIR IN THE WATER. CONTINUE STIRING UNTIL THOROUGHLY BLENDED,
BUT DO NOT OVERMIX.
2–POUR THE BATTER INTO THE BAKING PAN AND BAKE UNCOVERED, FOR 25 – 30 MIN
OR UNTIL A TOOTH PICK INSERTED INTO THE CENTER OF THE CAKE COMES OUT CLEAN.
DO NOT OVER BAKE THE SECRET OF THIS CAKE IS MOISTNESS. COOL IN THE PAN ON A WIRE RACK FOR
10 MINUTES, THEN REMOVE THE CAKE FROM THE PAN TO THE RACK TO COOL COMPLETELY.
FROST THE CAKE. YOU CAN MAKE TWO CAKES AND FROST IN THE MIDDLE AND AROUND.

Carrot Soup

Soup Recipe:
· 4 cups CLEAN water
· 1 ½ teaspoon sea salt
· 4 medium sized Raw Organic carrots cut into slices
· 1 large Raw Organic russet potato peeled and diced
· 1 large Raw Organic onion peeled and chopped
· 1/8th teaspoon Organic cayenne pepper
· ¼ teaspoon Organic Basil leaf
· 1 tablespoon Organic olive oil
· sunflower seeds &/or sesame seeds
Cooking instructions:
1. Place water and salt in a 3 quart sauce pan and bring water to just before boiling
2. Add potato, carrots, and onion – cover and let simmer on LOW for ten to fifteen minutes or until vegetables are just tender.
3. Place all contents from saucepan into either a blender or food processor and blend until smooth and creamy.
4. Return contents to sauce pan. Add pepper and basil leaf and reheat to serving temperature
5. Stir in the oil just before serving.
6. Garnish with nuts and seeds
* This soup can be made with a variety of vegetables. For example squash, cauliflower, tomato.

Cashew Cheese:
- 1 cup cashews,
- 1 tsp apple cider vinegar (or lemon juice)
- 1/4 tsp chipotle powder (optional – for heat)
- 1/4 tsp salt
- a few dashes pepper
- 1 cup water (use only as much as you need to create desired consistency)
- topping: chilled cashew cheese + freshly chopped cilantro
Directions:
1. Cashew Cheese: Cashews to a Vitamix or food processor. Add the cider vinegar, a pinch of salt and pepper (optional chipotle powder) and a splash of water. Start the blender on low. Add in more splashes of water until the mixture is churning well. Allow to mix until smooth. Add in only as much water as you need to achieve a smooth hummus-style consistency. Taste test. Add in a pinch more salt and pepper if desired. Place in fridge to chill.
Cashew Cream: Easy, Dairy Free Dessert Topping

Ingredients:
- 1 cup raw cashews
- 2 cups filtered white grape, pear or apple juice
- 2 Tbsp sesame seed oil, or melted coconut oil
- 1/4 cup powdered sugar or honey to taste
- 1 tsp vanilla or to taste
Preparation Tips
You’ll need a good blender to make cashew cream. If you want to double the recipe, make it in two batches so you don’t overtax your blender.
A blender stick could work better, to make a thick cream. It would also mean you don’t have to work hard to get it out of the blender! Plus you can make a double batch in one go. If you feel the need to run out and buy a blender stick – I recommend Braun as a strong but reasonably priced model. Kitchen Aid also makes a good one.
Directions:
1 Blend the cashews with the oil and vanilla, adding a small amount of the reserved juice as needed to help things along. Use as little liquid as possible – the cream should be thick
2. Add the sugar gradually, testing until it has the right amount sweetness for you
3. Using a rubber spatula, transfer the cream from the blender to a covered storage container, and refrigerate until needed.

Ingredients:
- 1 ripe banana, sliced
- 1/2 cup raspberries
- 1/4 cup blueberries
- 1 1/2 teaspoons honey
- 1/8 teaspoon ground cinnamon
- 1/2 cup unsweetened apple juice
- 1/2 cup ice
Preparation:
- Place ingredients in the order listed in a blender.
- Pulse twice to chop the fruit,
- Stir ingredients well
- Than blend until smooth.

Enchiladas de Pollo

Purchase chicken and turkey from Tropical traditions.
Tortillas for enchiladas are traditionally fried in oil. You do not need to do this. Instead, try this method.
Amount: 12 enchiladas (serves 6)
Oven: 300 degrees Bake: 5 minutes just enough to warm. covered
1. 2-2 1/3 cups Enchilada sauce
2. For enchilada filling combine:
- 2 cups diced cooked chicken or turkey
- 1 cup almonds, slivered or chopped
- 1 cup chopped onion
- about 1/3 cup of enchilada sauce (use our home made tomato sauce). Add chili powder
(Warm in oven 12 tortillas, sprinkle lightly w/ olive oil, fill.)
3. Pour a little of the enchilada sauce over the bottom of baking pan.
4. Divide filling evenly and place down center of each tortilla. Roll it up and place edge side down in baking pan.
5. Top rolled tortillas with: remaining enchilada sauce 1 1 /2 cups organic CASHEW CHEESE, or raw organic cheddar cheese. Preferably grated nuts, and chives
6. Bake covered at 350 degrees for 10 minutes or until hot through.
(As a side dish: Organic Beans with sliced avocado)

INGREDIENTS:
- ¼ CUP WARMED HONEY
- 2 TABLESPOONS LEMON JUICE
- 1/8 TEASPOON CREAM OF TARTAR
- DASH OF SALT
- 1 EGG WHITE
- 1 TEASPOON GRATED LEMON PEEL
IN THE TOP OF A DOUBLE BOILER, MIX
- HONEY
- LEMON JUICE
- CREAM OF TARTAR
- SALT
- EGG WHITE.
BEAT SEVERAL MINUTES, THEN PLACE OVER BOILING WATER AND BEAT UNTILL STIFF ENOUGH TO STAND IN PEAKS.
THIS WILL TAKE 5 TO 8 MINUTES.
REMOVE FROM THE HEAT AND BEAT UNTIL THICK ENOUGH TO SPREAD.
FOLD IN LEMON PEEL.

- 10 cups bread, cubed

- 3 tablespoons extra-virgin olive oil, divided
- 1 turkey liver or 2 chicken livers, diced
- 3 tablespoons COCONUT OIL.
- 8 cloves garlic, minced
- 4 SWEET POTATOES diced
- 2 cups finely chopped onions
- 2 pounds mushrooms or mixed wild mushrooms, stemmed, cleaned and coarsely chopped
- 1/4 cup chopped cilantro
- 2 teaspoons finely chopped fresh thyme
- 1 teaspoon salt
- Freshly ground pepper to taste
- 2 large eggs, lightly beaten
Preparation
- Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with oil.
- Place bread in a large bowl and toss with milk. Let stand, tossing or stirring occasionally, until saturated.
- Add the remaining 2 tablespoons oil and coconut oil to a pan and heat over very low heat. Add liver garlic and potatoes and lightly saute, stirring often, until softened and fragrant, about 2 minutes. Add onions and cook, stirring often, until softened, about 5 minutes. Add mushrooms and cook, stirring often, until the mushroom have softened, 4- 6 minutes. Add to the bowl.
- Add to the bowl .. Parsley,/cilantro, thyme, salt and pepper; stir to combine. Taste and adjust seasoning, if necessary. Stir in eggs. Transfer the stuffing to the prepared baking dish.
- Bake until heated through and golden on top, about 45 minutes.
Optional = add broth from turkey or chicken to taste.

No pizza pan? Don’t let that stop you. Roll dough into 13 to 14-inch circle; place on ungreased baking sheet and flute.
Pastry for 8 to 9-inch Two-crust Pie
- 6 to 7 tart apples
- 1/2 cup honey
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Crumble topping (below)
Heat oven to 425 degrees. Prepare pastry as directed. Flute edge. Do not pare apples; cut into slices of about 1/2 inch thick (about 8 cups). Beginning at edge of crust and overlapping slices, cover crust with apples. Stir together honey, cinnamon and nutmeg; sprinkle over apple slices. Top with crumble topping.
Bake 30 to 40 min. or until edge is golden brown and apples are tender. Best served warm and, if desired, topped with cinnamon ice cream.

- 1 1/2 cups (330 gm) whole grain brown rice
- 3 tablespoons Napa Valley olive oil
- 1/2 teaspoon turmeric
- 1/2 teaspoon curry powder
- 1/3 cup golden raisins
- 3 cups (710 ml) vegetable or chicken stock
- 1 1/2 tablespoons Homemade Celery Soup
INSTRUCTIONS:
- 1. Rinse the rice in a fine mesh colander until the water runs clear. Drain well.
- 2. In a saucepan, set over low- medium heat. Stir in the rice, turmeric, and curry powder, mixing well to coat the rice with the spices. Add the raisins, vegetable stock and celery soup and bring to a boil for 10 seconds.
- 3. Reduce the heat to low, cover the pot, and simmer for 18 minutes. (Do not lift the lid while cooking or the rice will become sticky.)
- 4. Remove from stove, Mix in the oil and serve.

Get the TOMATOES quite ripe , put half a pound of SEA salt to 20 MEDIUM TO LARGE tomatoes, add one medium sweet potato.
Add 1/4 cup apple cider vinegar. Honey, molasses, mace, nutmeg, allspice, cloves, cinnamon, ginger and pepper to taste.
BLEND IN BLENDER AND BOTTLE WHEN COLD. Refrigerate till needed.
2O tomatoes will make one or two bottles.

SHEPHERD’S PIE

- 1-1/4 lb. golden potatoes (about 4), cut into chunks
- 3 large cloves garlic
1 lb. ground beef
2 Tbsp. mashed cauliflower - 4 cups mixed fresh vegetables (carrots, green beans, peas squash)
- 3/4 homemade beef broth
- 2 Tbsp. homemade ketchup
- 3/4 cup Cashew Cream
- 1/2 cup Cashew Cheese, divided
- Salt and seasoning to taste.
Instructions:
- Steam potatoes and garlic in water in large saucepan 20 min. or less until potatoes are tender. Meanwhile, lightly sauté on very low heat, meat in a sauce pan. Stir in cauliflower; warm 1 min. Add mixed vegetables, broth and ketchup, Seasoning to taste; warm 5 min., stirring frequently.
- Heat oven to 375°F. Drain potatoes; return to pan. Add Cashew cream; mash until potatoes are smooth and mixture is well blended. Stir in 1/4 cup cheese.
- Spoon meat mixture into 8-inch square baking dish; cover with potatoes.
- Bake 15 min. Top with remaining cheese; bake 2 min. or until melted.

¼ cup chopped onion
2 cups cashew cheese
1 cups green peas
6 servings fresh tuna, lightly cooked
2 large mashed white potatoes for thickening
1 lb. pasta noodles

DIRECTIONS:
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until Al dente (just right) for 8-10 minutes. Drain.
- Preheat oven to 425 °F.
