Frosting / Icing -Lemon

LEMON ICING

 

INGREDIENTS:

  • ΒΌ CUP WARMED HONEY
  • 2 TABLESPOONS LEMON JUICE
  • 1/8 TEASPOON CREAM OF TARTAR
  • DASH OF SALT
  • 1 EGG WHITE
  • 1 TEASPOON GRATED LEMON PEEL

IN THE TOP OF A DOUBLE BOILER, MIX

  • HONEY
  • LEMON JUICE 
  • CREAM OF TARTAR 
  • SALT
  • EGG WHITE.

BEAT SEVERAL MINUTES, THEN PLACE OVER BOILING WATER AND BEAT UNTILL STIFF ENOUGH TO  STAND IN PEAKS.

THIS  WILL TAKE 5  TO 8 MINUTES.

REMOVE FROM THE HEAT AND BEAT UNTIL THICK ENOUGH TO SPREAD.

FOLD IN LEMON PEEL.

THIS IS A SOFT ICING AND THE CAKE SHOULD BE USED THE DAY IT IS ICED OR THE ICING MIGHT SOAK INTO THE CAKE !

 

THIS ICING KEEPS WELL

IT CAN BE USED IMMEDIATELY OR STORED, COVERED, IN THE REFRIGERATOR. 

BE SURE ALL INGREDIENTS ARE ORGANIC!!!!!!!!!!
